We were inspired by the optimism of the morning coffee ritual. To us, “true” reflects authenticity and consistency, both of which are core to what we do. And as for the bird, well, you know the saying about the early bird and the worm — the name also honors the early risers that keep this ritual alive. To us, this name carries notions of: Optimism, Authenticity, Ritual, Dependability.
We don’t serve drip at the moment, but we do serve Americanos, which are very similar to brewed coffee. It’s espresso plus hot water. If you like brewed coffee, you’ll like an Americano.
We care about the planet, and protecting it is a priority. We take advantage of opportunities to talk about our sustainable practices.We work with suppliers that source their ingredients ethically and sustainably: this is true of our coffee and our milk providers. Additionally, the Micro-Cafe consumes much less power and water than a traditional cafe per drink and has much less milk waste.
Definitely not, we love coffee shops. The feeling that you get when you walk into your favorite coffee shop was actually the inspiration for the design of our Micro-Cafe: we wanted to provide an uplifting moment in your day to pause and reward yourself. The thing is, it’s not always possible to build out a full coffee shop or have a coffee shop available where you would like a coffee on the go. Our Micro-Cafe was designed to exist in spaces where it’s impossible to get a great coffee, or a coffee at all, today — think building lobbies, offices, hospital waiting rooms, university libraries.
Truebird designed, iterated and built the Micro Cafe and have a partnership with La Colombe to power and operate this Micro Cafe at the Bryant Park Location.
We use barista quality espresso-making equipment coupled with AI, which allows us to make both incredibly high-quality and incredibly consistent products, and we use high-quality ingredients — the same types of ingredients you’d expect from a great coffee shop. Not only is the machine fine tuning itself based on the recipes and data that goes into every cup, we also have a quality assurance program that looks at every piece of data about each drink to make sure it hits the mark every time!

One of the key ingredients to great coffee is the routine cleaning of the equipment and the freshness of the product. As such, the Micro Café is cleaned and replenished with fresh coffee and fresh milk at least once a day.
